Ingredients

  • 1 teaspoon salt

  • 1 bay leaf
  • 2 tablespoons olive oil
  • 1 bell pepper, chopped
  • 1 carrot, diced

Instructions

  1. Rinse the black eyed peas and soak them in water overnight.
  2. Drain and rinse the peas again.
  3. In a large pot, heat olive oil over medium heat.
  4. Add onion, garlic, bell pepper, and carrot. Sauté until softened.
  5. Add black eyed peas, water, cumin, salt, pepper, and bay leaf.
  6. Bring to a boil, then reduce heat and simmer for 1 hour or until peas are tender.
  7. Remove the bay leaf before serving.
