A simple and hearty recipe featuring black eyed peas.
Ingredients

- 1 cup dried black eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- 2 tablespoons olive oil
- 1 bell pepper, chopped
- 1 carrot, diced
Instructions
- Rinse the black eyed peas and soak them in water overnight.
- Drain and rinse the peas again.
- In a large pot, heat olive oil over medium heat.
- Add onion, garlic, bell pepper, and carrot. Sauté until softened.
- Add black eyed peas, water, cumin, salt, pepper, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1 hour or until peas are tender.
- Remove the bay leaf before serving.
Notes
- This recipe can be served hot or cold.
- Leftovers can be stored in the refrigerator for up to 3 days.
- Great as a side dish or main course.
