Quick and easy meals suitable for the Daniel Fast.
Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, rinsed and drained
- 1 cup corn, frozen or fresh
- 1 red bell pepper, chopped
- 1 avocado, diced
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth.
- Bring to a boil, then reduce heat and cover.
- Cook for 15 minutes or until liquid is absorbed.
- In a bowl, mix black beans, corn, and red bell pepper.
- Once quinoa is cooked, fluff with a fork and add to the bowl.
- Add lime juice, avocado, salt, and pepper.
- Toss gently and serve.
Notes
- This meal is vegan and gluten-free.
- You can add other vegetables as desired.
- Store leftovers in the refrigerator for up to 3 days.
