Quick and easy meals suitable for the Daniel Fast.


Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or fresh
  • 1 red bell pepper, chopped
  • 1 avocado, diced
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth.
  3. Bring to a boil, then reduce heat and cover.
  4. Cook for 15 minutes or until liquid is absorbed.
  5. In a bowl, mix black beans, corn, and red bell pepper.
  6. Once quinoa is cooked, fluff with a fork and add to the bowl.
  7. Add lime juice, avocado, salt, and pepper.
  8. Toss gently and serve.
