A healthy and nourishing prosperity bowl for the New Year.


Ingredients

Scale
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup black beans, cooked
  • 1 cup corn, cooked
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes until quinoa is fluffy.
  4. In a large bowl, mix quinoa, black beans, corn, avocado, and cherry tomatoes.
  5. Drizzle lime juice over the mixture.
  6. Add salt and pepper to taste. Stir well.
  7. Garnish with cilantro before serving.
