Description

Delicious side dishes to complement prime rib.


Ingredients

  • Garlic Mashed Potatoes – 2 lbs potatoes, 4 cloves garlic, 1/2 cup butter, 1/2 cup cream
  • Roasted Brussels Sprouts – 1 lb Brussels sprouts, 2 tbsp olive oil, salt, pepper
  • Yorkshire Pudding – 1 cup all-purpose flour, 1 cup milk, 4 eggs, 1/2 tsp salt
  • Green Bean Almondine – 1 lb green beans, 1/4 cup sliced almonds, 2 tbsp butter, lemon juice

Instructions

  1. Peel and chop the potatoes. Boil until tender.
  2. In a pan, sauté garlic in butter, then mash with potatoes and cream.
  3. Trim Brussels sprouts, toss with olive oil, salt, and pepper. Roast in the oven at 400°F for 20 minutes.
  4. Mix flour, milk, eggs, and salt for Yorkshire pudding. Pour batter into hot oil in a muffin tin and bake until puffed.
  5. Blanch green beans, then sauté with butter and almonds. Add lemon juice before serving.
