Ingredients

  • 2 cups of quinoa
  • 4 cups of vegetable broth
  • 1 cup of cherry tomatoes, halved
  • 1 cup of cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of olive oil
  • 2 tablespoons of lemon juice
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, bring vegetable broth to a boil.
  3. Add quinoa to the pot and reduce heat to low.
  4. Cover and simmer for 15 minutes.
  5. Remove from heat and let it sit for 5 minutes.
  6. Fluff the quinoa with a fork.
  7. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, and parsley.
  8. Add the cooked quinoa to the bowl.
  9. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  10. Pour the dressing over the salad and toss to combine.

Notes

  • Can be served warm or chilled.
  • Add feta cheese for extra flavor.
  • Store leftovers in the refrigerator for up to 3 days.
