- 2 pounds potatoes, diced
- 1 cup mayonnaise
- 1 tablespoon mustard
- 1/2 cup celery, chopped
- 1/2 cup red onion, diced
- 1/4 cup dill pickles, chopped
- 2 hard-boiled eggs, chopped
- Salt and pepper to taste
Instructions
- Boil the diced potatoes in salted water until tender.
- Drain and let cool.
- In a large bowl, mix the mayonnaise and mustard.
- Add the cooled potatoes, celery, red onion, dill pickles, and hard-boiled eggs.
- Stir gently to combine.
- Season with salt and pepper.
- Chill in the refrigerator for at least 1 hour before serving.
