Instructions
- In a large bowl, combine cooked black eyed peas, red onion, bell pepper, and parsley.
- In a separate bowl, whisk together olive oil, vinegar, salt, and pepper.
- Pour the dressing over the salad and mix well.
- Let it sit for at least 30 minutes to allow flavors to meld.
- Serve chilled or at room temperature.
