A flavorful dish featuring pesto pasta tossed with roasted tomatoes.
Ingredients

- 8 oz pasta
- 1 cup pesto sauce
- 1 cup cherry tomatoes
- 2 tbsp olive oil
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Spread cherry tomatoes on a baking sheet.
- Drizzle with olive oil, and season with salt and pepper.
- Roast tomatoes for 20 minutes.
- Meanwhile, cook the pasta according to package instructions.
- Drain the pasta and return it to the pot.
- Add pesto and mix well.
- Once the tomatoes are done, add them to the pasta and toss gently.
- Serve warm.
Notes
- Feel free to add grated Parmesan cheese on top.
- Use gluten-free pasta if needed.
