Description

A flavorful dish featuring pesto pasta tossed with roasted tomatoes.


Ingredients

  • 8 oz pasta
  • 1 cup pesto sauce
  • 1 cup cherry tomatoes
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spread cherry tomatoes on a baking sheet.
  3. Drizzle with olive oil, and season with salt and pepper.
  4. Roast tomatoes for 20 minutes.
  5. Meanwhile, cook the pasta according to package instructions.
  6. Drain the pasta and return it to the pot.
  7. Add pesto and mix well.
  8. Once the tomatoes are done, add them to the pasta and toss gently.
  9. Serve warm.

Notes

  • Feel free to add grated Parmesan cheese on top.
  • Use gluten-free pasta if needed.
