- 4 large onions, thinly sliced
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon sugar
- 2 cloves garlic, minced
- 8 cups beef broth
- 1 cup dry white wine
- 2 tablespoons fresh thyme, chopped
- Salt and pepper to taste
- 8 slices baguette
- 2 cups Gruyère cheese, grated
Instructions
- Heat butter and olive oil in a large pot over medium heat.
- Add onions and sugar, cook until caramelized, about 30 minutes.
- Stir in garlic and cook for 1 minute.
- Add beef broth, wine, and thyme. Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Preheat your oven to broil.
- Place soup in oven-safe bowls, top with baguette slices and cheese.
- Broil until cheese is bubbly and golden, about 5 minutes.

- Use a good quality beef broth for the best flavor.
- Allow the soup to simmer longer for deeper flavors.
- Gruyère cheese can be substituted with Swiss cheese.
