Ingredients

  • Red food coloring (optional)
  • 1 cup unsalted butter, softened
  • 2 cups powdered sugar (for filling)
  • 1 teaspoon peppermint extract (for filling)

Instructions

  1. Preheat oven to 300°F (150°C).
  2. In a bowl, sift almond flour and powdered sugar.
  3. In another bowl, beat egg whites until foamy.
  4. Gradually add granulated sugar and beat until stiff peaks form.
  5. Fold in almond mixture and peppermint extract.
  6. Add food coloring if desired.
  7. Pipe small circles onto a baking sheet.
  8. Let sit for 30 minutes to form a skin.
  9. Bake for 15-20 minutes.
  10. Let cool completely.
  11. For filling, beat butter and powdered sugar until smooth.
  12. Add peppermint extract and mix well.
  13. Sandwich two macaron shells with filling.
