Description
Peppermint macarons are delicate French cookies with a minty flavor.
Ingredients

- 1 cup almond flour
- 1 3/4 cups powdered sugar
- 3 large egg whites
- 1/4 cup granulated sugar
- 1/2 teaspoon peppermint extract
- Red food coloring (optional)
- 1 cup unsalted butter, softened
- 2 cups powdered sugar (for filling)
- 1 teaspoon peppermint extract (for filling)
Instructions
- Preheat oven to 300°F (150°C).
- In a bowl, sift almond flour and powdered sugar.
- In another bowl, beat egg whites until foamy.
- Gradually add granulated sugar and beat until stiff peaks form.
- Fold in almond mixture and peppermint extract.
- Add food coloring if desired.
- Pipe small circles onto a baking sheet.
- Let sit for 30 minutes to form a skin.
- Bake for 15-20 minutes.
- Let cool completely.
- For filling, beat butter and powdered sugar until smooth.
- Add peppermint extract and mix well.
- Sandwich two macaron shells with filling.

- Store in an airtight container.
- Best enjoyed within a week.
- Can be frozen for longer storage.
