Delicious peppermint flavored cupcakes topped with creamy frosting.

- 1 cup all-purpose flour
- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 1 tsp peppermint extract
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup powdered sugar (for frosting)
- 2 tbsp milk (for frosting)
- 1/2 tsp peppermint extract (for frosting)
- Crushed peppermint candies (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream the butter and sugar together.
- Add eggs, milk, vanilla extract, and peppermint extract. Mix well.
- In another bowl, combine flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients. Mix until smooth.
- Fill cupcake liners with batter, about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow cupcakes to cool completely.
- For frosting, mix powdered sugar, milk, and peppermint extract until smooth.
- Frost cupcakes and sprinkle with crushed peppermint candies.
Notes
- Store cupcakes in an airtight container.
- Use fresh peppermint extract for best flavor.
- Adjust sweetness by adding more or less powdered sugar in frosting.
