Description

Ingredients

  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 tsp peppermint extract
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup powdered sugar (for frosting)
  • 2 tbsp milk (for frosting)
  • 1/2 tsp peppermint extract (for frosting)
  • Crushed peppermint candies (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream the butter and sugar together.
  3. Add eggs, milk, vanilla extract, and peppermint extract. Mix well.
  4. In another bowl, combine flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients. Mix until smooth.
  6. Fill cupcake liners with batter, about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow cupcakes to cool completely.
  9. For frosting, mix powdered sugar, milk, and peppermint extract until smooth.
  10. Frost cupcakes and sprinkle with crushed peppermint candies.
