- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- ½ cup unsalted butter, softened
- 1 cup milk
- 3 large eggs
- 2 tsp baking powder
- 1 tsp peppermint extract
- ½ tsp salt
- 1 cup crushed peppermint candies
- 1 cup powdered sugar
- 2 tbsp milk (for frosting)
- 1 tsp peppermint extract (for frosting)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- In a bowl, mix flour, baking powder, and salt.
- In another bowl, beat butter and sugar until creamy.
- Add eggs, milk, and peppermint extract to the butter mixture and mix well.
- Gradually add dry ingredients to wet ingredients and mix until combined.
- Fold in crushed peppermint candies.
- Divide the batter between the prepared pans.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let cakes cool for 10 minutes before transferring them to a wire rack.
- For frosting, mix powdered sugar, milk, and peppermint extract until smooth.
- Frost the cooled cakes and top with extra crushed peppermint if desired.
Notes
- Ensure the cakes are completely cool before frosting.
- Store leftovers in an airtight container.
- This cake can be made a day in advance.
