Description

Peanut buckeyes are delicious chocolate-covered peanut butter treats that resemble the nut of the buckeye tree.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 cups semisweet chocolate chips
  • 2 tablespoons vegetable oil

Instructions

  1. In a mixing bowl, combine peanut butter and softened butter until smooth.
  2. Add powdered sugar gradually and mix until fully incorporated.
  3. Shape the mixture into small balls and place them on a baking sheet.
  4. Freeze the balls for about 30 minutes.
  5. Melt chocolate chips and vegetable oil in a microwave or double boiler.
  6. Dip each peanut butter ball halfway into the melted chocolate.
  7. Place dipped balls back on the baking sheet and let them cool until chocolate hardens.
