Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Brown the oxtail on all sides.
  3. Add onion, carrots, and garlic. Sauté until softened.
  4. Stir in diced tomatoes, beef broth, bay leaf, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 2-3 hours.
  6. Remove bay leaf before serving.
