Ingredients

  • 1 cup orzo pasta
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Boil water in a pot.
  2. Add orzo pasta and cook for 8-10 minutes until al dente.
  3. Drain and rinse under cold water.
  4. In a large bowl, combine orzo, tomatoes, cucumber, onion, feta, and olives.
  5. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  6. Pour dressing over salad and toss to combine.
  7. Chill before serving.
