Description
A classic potato salad with a creamy dressing.
Ingredients

- 2 pounds potatoes
- 1 cup mayonnaise
- 2 tablespoons mustard
- 1/2 cup celery, chopped
- 1/2 cup onion, chopped
- 2 hard-boiled eggs, chopped
- Salt to taste
- Pepper to taste
Instructions
- Boil the potatoes until tender. Drain and cool.
- In a bowl, mix mayonnaise, mustard, salt, and pepper.
- Chop the cooled potatoes and add to the bowl.
- Add celery, onion, and eggs to the mixture.
- Stir gently to combine.
- Chill in the refrigerator for at least an hour before serving.
Notes
- Use waxy potatoes for better texture.
- Customize with pickles or herbs if desired.
