Description
Oatmeal thumbprint cookies are chewy cookies filled with fruit preserves.
Ingredients

- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup fruit preserves (your choice)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, cream butter and sugars together.
- Add vanilla and mix well.
- In another bowl, combine oats, flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture.
- Drop tablespoonfuls of dough onto a baking sheet.
- Create an indentation in the center of each cookie.
- Fill each indentation with fruit preserves.
- Bake for 10-12 minutes or until lightly golden.
- Let cool on a wire rack.
Notes
- Store cookies in an airtight container.
- Use any fruit preserves you prefer.
- For a nutty flavor, add chopped nuts to the dough.
