Ingredients

  • Salt and pepper to taste
  • 1 cup of mixed vegetables (carrots, peas, bell peppers)
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the quinoa under cold water.
  3. In a saucepan, combine quinoa and vegetable broth. Bring to a boil.
  4. Lower the heat and cover. Simmer for 15 minutes.
  5. While quinoa cooks, season chicken with olive oil, garlic powder, salt, and pepper.
  6. Place chicken in a baking dish and bake for 25-30 minutes.
  7. In a skillet, sauté mixed vegetables until tender.
  8. Fluff quinoa with a fork and mix in sautéed vegetables.
  9. Serve chicken on a bed of quinoa and garnish with parsley.
