Ingredients

- 2 chicken breasts
- 1 cup of quinoa
- 2 cups of vegetable broth
- 1 tablespoon of olive oil
- 1 teaspoon of garlic powder
- Salt and pepper to taste
- 1 cup of mixed vegetables (carrots, peas, bell peppers)
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Rinse the quinoa under cold water.
- In a saucepan, combine quinoa and vegetable broth. Bring to a boil.
- Lower the heat and cover. Simmer for 15 minutes.
- While quinoa cooks, season chicken with olive oil, garlic powder, salt, and pepper.
- Place chicken in a baking dish and bake for 25-30 minutes.
- In a skillet, sauté mixed vegetables until tender.
- Fluff quinoa with a fork and mix in sautéed vegetables.
- Serve chicken on a bed of quinoa and garnish with parsley.

- You can substitute quinoa with rice if preferred.
