  • 4 cups Brussels sprouts
  • 1 lb baby potatoes
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp garlic, minced
  • ½ cup balsamic vinegar
  • 1 cup red wine
  • 1 cup heavy cream

Instructions

  1. Preheat the oven to 400°F.
  2. Season the beef tenderloin with salt and pepper.
  3. Heat olive oil in a skillet and sear the beef on all sides.
  4. Transfer the beef to the oven and roast for 20-25 minutes.
  5. In the same skillet, add Brussels sprouts and potatoes, sauté until tender.
  6. Stir in garlic and cook for 1 minute.
  7. Deglaze the skillet with balsamic vinegar and red wine, simmer until reduced.
  8. Stir in heavy cream and cook for 2-3 minutes.
  9. Slice the beef and serve with vegetables and sauce.
