- 2 lbs beef tenderloin
- 4 cups Brussels sprouts
- 1 lb baby potatoes
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 2 tbsp garlic, minced
- ½ cup balsamic vinegar
- 1 cup red wine
- 1 cup heavy cream
Instructions
- Preheat the oven to 400°F.
- Season the beef tenderloin with salt and pepper.
- Heat olive oil in a skillet and sear the beef on all sides.
- Transfer the beef to the oven and roast for 20-25 minutes.
- In the same skillet, add Brussels sprouts and potatoes, sauté until tender.
- Stir in garlic and cook for 1 minute.
- Deglaze the skillet with balsamic vinegar and red wine, simmer until reduced.
- Stir in heavy cream and cook for 2-3 minutes.
- Slice the beef and serve with vegetables and sauce.
Notes
- Let the beef rest for 10 minutes before slicing.
- Adjust seasoning to taste.
