Ingredients

- 2 lbs beef tenderloin
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 cup red wine
- 1 tbsp fresh rosemary, chopped
- 2 cups asparagus, trimmed
- 1 lb baby potatoes, halved
Instructions
- Preheat your oven to 400°F (200°C).
- Rub the beef tenderloin with olive oil, garlic, salt, and pepper.
- Heat a skillet over high heat and sear the beef on all sides.
- Transfer the beef to a baking dish and pour red wine over it.
- Sprinkle chopped rosemary on top.
- In the same skillet, sauté asparagus and potatoes for 5 minutes.
- Add the vegetables to the baking dish around the beef.
- Bake for 25-30 minutes or until the beef reaches your desired doneness.
- Let the beef rest for 10 minutes before slicing.
- Serve with the roasted vegetables.
