Ingredients

  • 2 lbs beef tenderloin
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp rosemary, chopped
  • 1 tbsp thyme, chopped
  • Salt and pepper to taste
  • 1 cup red wine
  • 1 cup beef broth
  • 1 lb asparagus, trimmed
  • 1 lb baby potatoes, halved

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rub the beef tenderloin with garlic, olive oil, rosemary, thyme, salt, and pepper.
  3. In a hot skillet, sear the beef on all sides until browned.
  4. Transfer the beef to a roasting pan.
  5. In the same skillet, add red wine and beef broth, scraping the bottom to deglaze.
  6. Pour the sauce over the beef.
  7. Add asparagus and baby potatoes to the pan.
  8. Roast for 25-30 minutes or until desired doneness.
  9. Let the beef rest for 10 minutes before slicing.
  10. Serve with roasted vegetables.

  • Beef can be marinated overnight for more flavor.
  • Adjust cooking time based on beef thickness.
