A festive New Year’s Eve meal to celebrate the coming year.
Ingredients

- 2 lbs beef tenderloin
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp rosemary, chopped
- 1 tbsp thyme, chopped
- Salt and pepper to taste
- 1 cup red wine
- 1 cup beef broth
- 1 lb asparagus, trimmed
- 1 lb baby potatoes, halved
Instructions
- Preheat your oven to 400°F (200°C).
- Rub the beef tenderloin with garlic, olive oil, rosemary, thyme, salt, and pepper.
- In a hot skillet, sear the beef on all sides until browned.
- Transfer the beef to a roasting pan.
- In the same skillet, add red wine and beef broth, scraping the bottom to deglaze.
- Pour the sauce over the beef.
- Add asparagus and baby potatoes to the pan.
- Roast for 25-30 minutes or until desired doneness.
- Let the beef rest for 10 minutes before slicing.
- Serve with roasted vegetables.
Notes
- Beef can be marinated overnight for more flavor.
- Adjust cooking time based on beef thickness.
- Pair with a nice red wine.
