Ingredients

  • 2 cups of black-eyed peas
  • 1 cup of diced ham
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups of chicken broth
  • 1 teaspoon of thyme
  • Salt and pepper to taste
  • 1 tablespoon of olive oil

Instructions

  1. Rinse and soak black-eyed peas overnight.
  2. In a pot, heat olive oil over medium heat.
  3. Add chopped onion and garlic, and sauté until soft.
  4. Add ham and cook for 2 minutes.
  5. Stir in black-eyed peas, chicken broth, thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 1 hour.
  7. Serve hot.
