A festive menu for celebrating New Year’s Day.
Ingredients

- 2 cups of black-eyed peas
- 1 cup of diced ham
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups of chicken broth
- 1 teaspoon of thyme
- Salt and pepper to taste
- 1 tablespoon of olive oil
Instructions
- Rinse and soak black-eyed peas overnight.
- In a pot, heat olive oil over medium heat.
- Add chopped onion and garlic, and sauté until soft.
- Add ham and cook for 2 minutes.
- Stir in black-eyed peas, chicken broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Serve hot.
Notes
- Soaking peas helps in cooking them faster.
- Adjust seasoning to your taste.
- Can be served with cornbread.
