Ingredients

- 1 whole chicken (about 4–5 lbs)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, quartered
- 4 garlic cloves, minced
- Fresh herbs (rosemary, thyme)
- 4 cups mixed vegetables (carrots, potatoes, green beans)
Instructions
- Preheat the oven to 375°F (190°C).
- Rinse the chicken and pat dry.
- Rub olive oil, salt, and pepper all over the chicken.
- Stuff the cavity with lemon, garlic, and fresh herbs.
- Place the chicken in a roasting pan.
- Arrange mixed vegetables around the chicken in the pan.
- Roast for 1 hour and 15 minutes or until the chicken reaches 165°F (75°C).
- Let it rest for 10 minutes before carving.
