Description

Ingredients

  • 1 cup dried black-eyed peas
  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 smoked ham hock
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon cayenne pepper
  • 2 tablespoons olive oil

Instructions

  1. Rinse black-eyed peas and soak them overnight.
  2. In a pot, heat olive oil over medium heat.
  3. Add onion and garlic, sauté until soft.
  4. Drain peas and add to the pot with water and ham hock.
  5. Season with salt, black pepper, and cayenne pepper.
  6. Bring to a boil, then reduce heat and simmer for 1 hour.
  7. Remove ham hock, shred meat, and return to pot.
  8. Serve hot.

  • Soaking peas reduces cooking time.
