Instructions

  1. Rinse the black-eyed peas under cold water.
  2. In a pot, combine peas, water, onion, garlic, salt, pepper, olive oil, bay leaf, and ham hock.
  3. Bring to a boil over medium heat.
  4. Reduce heat and simmer for 1-2 hours until peas are tender.
  5. Remove the ham hock, shred meat if desired, and return to pot.
  6. Serve warm and enjoy your good luck for the new year.
