Ingredients

- 1 cup dried black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 bay leaf
- 1 smoked ham hock (optional)
Instructions
- Rinse the black-eyed peas under cold water.
- In a pot, combine peas, water, onion, garlic, salt, pepper, olive oil, bay leaf, and ham hock.
- Bring to a boil over medium heat.
- Reduce heat and simmer for 1-2 hours until peas are tender.
- Remove the ham hock, shred meat if desired, and return to pot.
- Serve warm and enjoy your good luck for the new year.

- Soak peas overnight for quicker cooking.
- Adjust seasoning to taste.
- Can be served with cornbread.
