Description
Mississippi caviar is a flavorful dip made with black-eyed peas.

- 1 can black-eyed peas, drained
- 1/2 cup diced bell pepper
- 1/2 cup diced onion
- 1/2 cup diced tomatoes
- 1/4 cup olive oil
- 2 tablespoons vinegar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 cup chopped fresh cilantro
Instructions
- In a large bowl, combine black-eyed peas, bell pepper, onion, and tomatoes.
- In a separate bowl, whisk together olive oil, vinegar, salt, black pepper, and garlic powder.
- Pour the dressing over the black-eyed pea mixture and stir to combine.
- Add chopped cilantro and mix well.
- Refrigerate for at least 30 minutes before serving.

- Serve with tortilla chips or crackers.
