Ingredients

- 4 medium zucchinis
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 1/4 cup olives, chopped
- 1/4 cup red onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the zucchinis in half lengthwise and scoop out the center.
- In a bowl, mix quinoa, tomatoes, feta, olives, onion, garlic, olive oil, oregano, salt, and pepper.
- Stuff the zucchini halves with the mixture.
- Place the stuffed zucchinis on a baking dish.
- Bake for 25-30 minutes until zucchinis are tender.
- Serve warm and enjoy.
Notes
- Feel free to add other vegetables to the filling.
- You can use brown rice instead of quinoa.
