Ingredients

  • 1 cup cherry tomatoes, halved

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise and scoop out the center.
  3. In a bowl, mix quinoa, tomatoes, feta, olives, onion, garlic, olive oil, oregano, salt, and pepper.
  4. Stuff the zucchini halves with the mixture.
  5. Place the stuffed zucchinis on a baking dish.
