Ingredients

- 1 cup black-eyed peas, soaked overnight
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Drain and rinse the soaked black-eyed peas.
- In a pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until softened.
- Add bell pepper, cook for 3 minutes.
- Add black-eyed peas, diced tomatoes, cumin, and paprika.
- Pour in enough water to cover the peas.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes.
- Season with salt and pepper.
- Garnish with fresh parsley before serving.
Notes
- Soaking the peas overnight helps to soften them.
- Adjust spices according to your taste.
