Instructions

  1. Drain and rinse the soaked black-eyed peas.
  2. In a pot, heat olive oil over medium heat.
  3. Add onion and garlic, sauté until softened.
  4. Add bell pepper, cook for 3 minutes.
  5. Add black-eyed peas, diced tomatoes, cumin, and paprika.
  6. Pour in enough water to cover the peas.
  7. Bring to a boil, then reduce heat and simmer for 30-40 minutes.
  8. Season with salt and pepper.
  9. Garnish with fresh parsley before serving.
