A refreshing Mediterranean black eyed pea salad that is healthy and filling.


Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine black eyed peas, cherry tomatoes, cucumber, red onion, and parsley.
  2. Add feta cheese to the bowl.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the salad and mix well.
  5. Chill in the refrigerator for at least 30 minutes before serving.
