- 1 cup black beans, drained and rinsed
- 1 cup corn, drained
- 1 cup diced tomatoes
- 1 cup shredded cheese
- 1/2 cup chopped bell peppers
- 1/4 cup chopped red onion
- 1 tablespoon olive oil
- 1 tablespoon taco seasoning
- 1 avocado, diced
- Tortilla chips for serving
Instructions
- Preheat your oven to 350°F.
- In a large bowl, combine black beans, corn, diced tomatoes, cheese, bell peppers, and red onion.
- Add olive oil and taco seasoning, then mix well.
- Spread the mixture in a baking dish.
- Bake for 20 minutes or until cheese is melted.
- Remove from oven and top with diced avocado.
- Serve with tortilla chips.

- Can add jalapeños for spice.
