Ingredients

- 1 cup black eyed peas, soaked overnight
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Rinse and drain the soaked black eyed peas.
- In a large pot, sauté onion and garlic until soft.
- Add bell pepper and cook for 3 minutes.
- Stir in diced tomatoes, black eyed peas, vegetable broth, cumin, and paprika.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Season with salt and pepper before serving.
