A collection of meals suitable for the Daniel Fast.
Ingredients

- 1 cup dried beans
- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup diced tomatoes
- 1 cup chopped spinach
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Rinse beans and soak overnight.
- In a pot, heat olive oil over medium heat.
- Add soaked beans and vegetable broth.
- Simmer for 1 hour or until beans are tender.
- Stir in quinoa and diced tomatoes.
- Add spinach, garlic powder, onion powder, salt, and pepper.
- Cook for an additional 20 minutes.
- Serve warm.
Notes
- Adjust seasoning according to taste.
- Feel free to add other vegetables.
- Store leftovers in the refrigerator for up to 3 days.
