Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup black beans, drained and rinsed
- 1 cup corn, canned or frozen
- 1 red bell pepper, diced
- 1 avocado, diced
- 1 lime, juiced
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until quinoa is cooked.
- In a large bowl, combine cooked quinoa, black beans, corn, bell pepper, and avocado.
- Add lime juice, cumin, salt, and pepper. Mix well.
- Serve chilled or at room temperature.

- Can be made a day in advance.
- Serve with tortilla chips for a crunchy option.
