Ingredients

  • 1 cup corn, canned or frozen
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1 lime, juiced

  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until quinoa is cooked.
  4. In a large bowl, combine cooked quinoa, black beans, corn, bell pepper, and avocado.
  5. Add lime juice, cumin, salt, and pepper. Mix well.
  6. Serve chilled or at room temperature.
