Ingredients

  • 4 cups water
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon thyme
  • 1 teaspoon cayenne pepper
  • 1 lb smoked sausage, sliced
  • 4 cups cooked rice
  • Salt and pepper to taste

Instructions

  1. Soak the red beans overnight in water.
  2. Drain and rinse the beans.
  3. In a pot, combine beans and 4 cups of fresh water.
  4. Add onion, bell pepper, celery, garlic, bay leaves, thyme, and cayenne.
  5. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
  6. Add the smoked sausage and cook for another 30 minutes.
  7. Remove bay leaves and season with salt and pepper.
  8. Serve over cooked rice.
