Description
A classic Louisiana dish featuring red beans and rice, seasoned with spices and smoked sausage.
Ingredients

- 1 cup red beans
- 4 cups water
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 2 bay leaves
- 1 teaspoon thyme
- 1 teaspoon cayenne pepper
- 1 lb smoked sausage, sliced
- 4 cups cooked rice
- Salt and pepper to taste
Instructions
- Soak the red beans overnight in water.
- Drain and rinse the beans.
- In a pot, combine beans and 4 cups of fresh water.
- Add onion, bell pepper, celery, garlic, bay leaves, thyme, and cayenne.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
- Add the smoked sausage and cook for another 30 minutes.
- Remove bay leaves and season with salt and pepper.
- Serve over cooked rice.
Notes
- Adjust spices to your taste.
- For a vegetarian version, omit sausage.
- This dish tastes better the next day.
