Ingredients

- 1 lobster (about 1.5 pounds)
- 2 cups rice
- 4 cups seafood stock
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 onion, chopped
- 1 bell pepper, diced
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Boil the lobster in salted water for 10-12 minutes. Remove and let cool.
- In a pan, heat olive oil over medium heat.
- Add garlic, onion, and bell pepper. Sauté until softened.
- Add rice and paprika. Stir to coat the rice.
- Pour in seafood stock. Bring to a boil.
- Reduce heat, cover, and simmer for 15-20 minutes.
- Meanwhile, remove lobster meat from the shell and chop it into pieces.
- Once rice is cooked, fold in lobster meat. Season with salt and pepper.
- Garnish with fresh parsley before serving.
