Ingredients

- 2 cooked lobsters, meat removed and chopped
- 1 cup heavy cream
- 1/2 cup grated cheese (Gruyère or Parmesan)
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 shallot, finely chopped
- 1 tablespoon Dijon mustard
- 1 tablespoon brandy or white wine
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet, heat butter and olive oil over medium heat.
- Add shallot and sauté until translucent.
- Stir in the chopped lobster meat and cook for 2-3 minutes.
- Add cream, cheese, mustard, brandy, salt, and pepper. Mix well.
- Fill lobster shells with the mixture.
- Place filled shells on a baking sheet and bake for 15-20 minutes.
- Garnish with parsley before serving.
