Lobster Thermidor is a classic French dish featuring lobster meat cooked in a creamy, rich sauce, then baked with cheese.

- 2 whole lobsters (1.5 lbs each)
- 4 tablespoons butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 tablespoon Dijon mustard
- 1 tablespoon brandy
- 1 cup grated Gruyère cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Boil lobsters in salted water for 10-12 minutes until cooked. Remove and let cool.
- Extract the lobster meat and chop it into bite-sized pieces.
- In a pan, melt butter over medium heat. Sauté onion and garlic until soft.
- Add lobster meat, heavy cream, mustard, and brandy. Cook for 5 minutes.
- Season with salt and pepper. Stir in half of the cheese.
- Fill lobster shells with the mixture. Top with remaining cheese.
- Broil in the oven for 5-7 minutes until cheese is golden.
- Garnish with parsley and serve hot.
