Ingredients

- 2 cups cooked lobster meat, chopped
- 1 cup heavy cream
- 1/2 cup mayonnaise
- 1/4 cup fresh lemon juice
- 1 tablespoon Dijon mustard
- 1 tablespoon gelatin, dissolved in 1/4 cup cold water
- Salt and pepper to taste
- Fresh herbs for garnish
Instructions
- Prepare a loaf pan by lining it with plastic wrap.
- In a bowl, mix the chopped lobster with salt, pepper, and herbs.
- In another bowl, combine heavy cream, mayonnaise, lemon juice, and Dijon mustard.
- Stir in the dissolved gelatin until well mixed.
- Fold the lobster mixture into the cream mixture until combined.
- Pour the mixture into the prepared loaf pan.
- Cover with plastic wrap and refrigerate for at least 4 hours or until set.
- Unmold the terrine onto a serving platter and slice to serve.
Notes
- Serve with a salad or crusty bread.
- Can be made a day in advance.
