Ingredients

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 1 tbsp rice vinegar
  • 1/2 lb cooked lobster meat
  • 4 sheets nori
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • soy sauce for serving

Instructions

  1. Rinse sushi rice under cold water until water runs clear.
  2. Combine rice and water in a pot, bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Remove from heat and let sit for 10 minutes.
  4. Mix rice vinegar into rice and let cool.
  5. Lay a sheet of nori on a bamboo mat.
  6. Spread a thin layer of rice over nori, leaving a border at the top.
  7. Layer lobster meat, avocado, and cucumber on top of rice.
  8. Roll the sushi tightly using the mat.
  9. Slice the roll into bite-sized pieces.
  10. Serve with soy sauce.
