Delicious lobster sushi rolls with fresh ingredients.
Ingredients

- 1 cup sushi rice
- 1 1/4 cups water
- 1 tbsp rice vinegar
- 1/2 lb cooked lobster meat
- 4 sheets nori
- 1 avocado, sliced
- 1 cucumber, julienned
- soy sauce for serving
Instructions
- Rinse sushi rice under cold water until water runs clear.
- Combine rice and water in a pot, bring to a boil, then reduce heat and simmer for 20 minutes.
- Remove from heat and let sit for 10 minutes.
- Mix rice vinegar into rice and let cool.
- Lay a sheet of nori on a bamboo mat.
- Spread a thin layer of rice over nori, leaving a border at the top.
- Layer lobster meat, avocado, and cucumber on top of rice.
- Roll the sushi tightly using the mat.
- Slice the roll into bite-sized pieces.
- Serve with soy sauce.
