Delicious lobster stuffed potatoes filled with creamy lobster mix.

- 4 large russet potatoes
- 1 cup cooked lobster meat, chopped
- 1/2 cup sour cream
- 1/4 cup butter, melted
- 1/2 cup shredded cheddar cheese
- 1/4 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork.
- Bake the potatoes for 45-60 minutes until tender.
- While potatoes bake, mix lobster meat, sour cream, butter, cheese, green onions, salt, and pepper in a bowl.
- Once baked, cut the potatoes in half and scoop out some flesh.
- Mix the scooped potato flesh with the lobster mixture.
- Fill the potato skins with the lobster mixture.
- Bake for an additional 15 minutes.
- Serve warm and enjoy.
