Description

Delicious lobster stuffed potatoes filled with creamy lobster mix.


Ingredients

  • 4 large russet potatoes
  • 1 cup cooked lobster meat, chopped
  • 1/2 cup sour cream
  • 1/4 cup butter, melted
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork.
  3. Bake the potatoes for 45-60 minutes until tender.
  4. While potatoes bake, mix lobster meat, sour cream, butter, cheese, green onions, salt, and pepper in a bowl.
  5. Once baked, cut the potatoes in half and scoop out some flesh.
  6. Mix the scooped potato flesh with the lobster mixture.
  7. Fill the potato skins with the lobster mixture.
  8. Bake for an additional 15 minutes.
  9. Serve warm and enjoy.
