A flavorful stock made from lobster shells, perfect for soups and sauces.


Ingredients

  • 4 cups lobster shells
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, crushed
  • 1 bay leaf
  • 1 teaspoon black peppercorns
  • 8 cups water

Instructions

  1. Rinse the lobster shells under cold water.
  2. In a large pot, combine the lobster shells, onion, carrots, celery, garlic, bay leaf, and peppercorns.
  3. Add water and bring to a boil.
  4. Reduce heat and simmer for 30-45 minutes.
  5. Strain the stock through a fine mesh sieve.
  6. Store or use the stock immediately.
