Description
A classic lobster stew recipe from Maine, rich and creamy with fresh lobster flavor.
Ingredients

- 2 live lobsters (1.5 pounds each)
- 4 cups seafood stock
- 1 cup heavy cream
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped carrot
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1 tablespoon fresh thyme
- Salt and pepper to taste
Instructions
- Bring a large pot of water to a boil and cook lobsters for 8-10 minutes.
- Remove lobsters, let cool, then remove meat from tails and claws.
- Chop lobster meat into bite-sized pieces.
- In a large pot, melt butter over medium heat. Add onion, celery, and carrot. Sauté until soft.
- Add garlic and thyme, cooking for an additional minute.
- Pour in seafood stock and bring to a simmer.
- Stir in heavy cream and lobster meat. Cook until heated through.
- Season with salt and pepper to taste. Serve hot.
Notes
- Use fresh lobster for the best flavor.
- Adjust the thickness by adding more or less cream.
