  • 2 live lobsters (1.5 pounds each)
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery

  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon fresh thyme
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of water to a boil and cook lobsters for 8-10 minutes.
  2. Remove lobsters, let cool, then remove meat from tails and claws.
  3. Chop lobster meat into bite-sized pieces.
  4. In a large pot, melt butter over medium heat. Add onion, celery, and carrot. Sauté until soft.
  5. Add garlic and thyme, cooking for an additional minute.
  6. Pour in seafood stock and bring to a simmer.
  7. Stir in heavy cream and lobster meat. Cook until heated through.
  8. Season with salt and pepper to taste. Serve hot.
