Ingredients

- 2 lobsters, cooked and chopped
- 1 cup heavy cream
- 1 cup seafood stock
- 1 cup diced tomatoes
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped carrots
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Melt butter in a large pot over medium heat.
- Add onions, celery, and carrots. Cook until soft.
- Add garlic and thyme. Cook for 1 minute.
- Stir in diced tomatoes and seafood stock. Simmer for 10 minutes.
- Add heavy cream and lobster meat. Stir and heat through.
- Season with salt and pepper. Serve hot.
