Ingredients

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1 cup cooked lobster meat, chopped
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup marinara sauce

Instructions

  1. Mix flour and eggs to form a dough.
  2. Knead the dough for 10 minutes until smooth.
  3. Wrap and let it rest for 30 minutes.
  4. Combine lobster meat, ricotta, Parmesan, lemon juice, salt, and pepper in a bowl.
  5. Roll out the dough thinly and cut into squares.
  6. Place a spoonful of filling on each square.
  7. Fold and seal the ravioli edges.
  8. Boil ravioli in salted water for 4-5 minutes.
  9. Heat olive oil in a pan and sauté ravioli for 2 minutes.
  10. Serve with marinara sauce.
