- 2 cups cooked lobster meat, chopped
- 1 cup shredded Monterey Jack cheese
- 1/2 cup diced bell pepper
- 1/4 cup chopped onion
- 4 flour tortillas
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Sauté onion and bell pepper until soft.
- Add lobster meat, garlic powder, salt, and pepper. Stir until heated through.
- Place a tortilla in the skillet, sprinkle half with cheese, and add the lobster mixture.
- Fold the tortilla in half and cook until golden brown, about 3 minutes on each side.
- Repeat with remaining tortillas and filling.
- Cut into wedges and serve hot.
