Ingredients

- 1 cup sushi rice
- 1 1/4 cups water
- 8 oz cooked lobster meat, chopped
- 1 avocado, sliced
- 1/2 cucumber, thinly sliced
- 1/4 cup edamame
- 2 radishes, thinly sliced
- 2 green onions, chopped
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp rice vinegar
- Sesame seeds for garnish
Instructions
- Rinse sushi rice under cold water until water runs clear.
- Combine rice and water in a pot and bring to a boil.
- Reduce heat, cover, and simmer for 18 minutes.
- Remove from heat and let sit for 10 minutes, covered.
- In a bowl, mix soy sauce, sesame oil, and rice vinegar.
- Fluff the rice and divide it into bowls.
- Top rice with lobster, avocado, cucumber, edamame, radishes, and green onions.
- Drizzle the sauce over the top and sprinkle with sesame seeds.
