Ingredients

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 8 oz cooked lobster meat, chopped
  • 1 avocado, sliced
  • 1/2 cucumber, thinly sliced
  • 1/4 cup edamame
  • 2 radishes, thinly sliced
  • 2 green onions, chopped
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp rice vinegar
  • Sesame seeds for garnish

Instructions

  1. Rinse sushi rice under cold water until water runs clear.
  2. Combine rice and water in a pot and bring to a boil.
  3. Reduce heat, cover, and simmer for 18 minutes.
  4. Remove from heat and let sit for 10 minutes, covered.
  5. In a bowl, mix soy sauce, sesame oil, and rice vinegar.
  6. Fluff the rice and divide it into bowls.
  7. Top rice with lobster, avocado, cucumber, edamame, radishes, and green onions.
  8. Drizzle the sauce over the top and sprinkle with sesame seeds.
