Ingredients

  • 2 lobster tails
  • 2 ciabatta rolls
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded lettuce
  • 1/2 cup sliced tomatoes
  • 2 slices of cheese (optional)

Instructions

  1. Cook lobster tails in boiling water for 8-10 minutes.
  2. Remove the lobster meat from the shells and chop it.
  3. In a bowl, mix mayonnaise, lemon juice, salt, and pepper.
  4. Add lobster to the mayonnaise mixture and stir well.
  5. Preheat a panini press.
  6. Spread the lobster mixture on one ciabatta roll.
  7. Add lettuce, tomatoes, and cheese if desired.
  8. Top with the second ciabatta roll.
  9. Grill in the panini press for 4-5 minutes until golden brown.
  10. Slice and serve hot.
