Ingredients

- 1 lobster, cleaned and cut into pieces
- 2 cups Arborio rice
- 4 cups seafood broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 tsp paprika
- 1/2 tsp saffron threads
- 1 cup peas
- 2 tbsp olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion, garlic, and bell pepper. Sauté until softened.
- Stir in rice and cook for 2 minutes.
- Add broth, saffron, paprika, salt, and pepper. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Add lobster and peas. Cook for another 5 minutes or until lobster is cooked through.
- Remove from heat and let it sit for 5 minutes before serving.
Notes
- Use fresh lobster for best flavor.
- Adjust spices based on taste.
- Serve with lemon wedges.
