Ingredients

  • 1 lobster, cleaned and cut into pieces
  • 2 cups Arborio rice
  • 4 cups seafood broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 tsp paprika
  • 1/2 tsp saffron threads
  • 1 cup peas
  • 2 tbsp olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion, garlic, and bell pepper. Sauté until softened.
  3. Stir in rice and cook for 2 minutes.
  4. Add broth, saffron, paprika, salt, and pepper. Bring to a boil.
  5. Reduce heat, cover, and simmer for 15 minutes.
  6. Add lobster and peas. Cook for another 5 minutes or until lobster is cooked through.
  7. Remove from heat and let it sit for 5 minutes before serving.
