Ingredients

- 2 cups cooked lobster meat, chopped
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 2 cups heavy cream
- 1/4 cup sherry
- 4 egg yolks
- Salt, to taste
- Pepper, to taste
- 1/4 teaspoon paprika
- Chopped parsley, for garnish
Instructions
- Melt butter in a saucepan over medium heat.
- Stir in flour and cook for 2 minutes.
- Gradually add heavy cream, stirring constantly until thickened.
- Stir in sherry and season with salt, pepper, and paprika.
- Whisk egg yolks in a separate bowl.
- Slowly add a bit of the hot mixture to the egg yolks, then stir back into the sauce.
- Add lobster meat and cook until heated through.
- Serve hot, garnished with parsley.
