Instructions

  1. Melt butter in a saucepan over medium heat.
  2. Stir in flour and cook for 2 minutes.
  3. Gradually add heavy cream, stirring constantly until thickened.
  4. Stir in sherry and season with salt, pepper, and paprika.
  5. Whisk egg yolks in a separate bowl.
  6. Slowly add a bit of the hot mixture to the egg yolks, then stir back into the sauce.
  7. Add lobster meat and cook until heated through.
  8. Serve hot, garnished with parsley.
