Lobster Newburg is a rich and creamy seafood dish made with lobster, egg yolks, and brandy.
Ingredients

- 2 cups cooked lobster meat, chopped
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 2 cups heavy cream
- 1/4 cup sherry or brandy
- 3 egg yolks
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 1/4 teaspoon paprika
- Chopped parsley for garnish
Instructions
- Melt butter in a saucepan over medium heat.
- Add flour and stir until smooth.
- Gradually whisk in the heavy cream and bring to a simmer.
- Add sherry or brandy, salt, pepper, and paprika.
- Stir in lobster meat and cook for 5 minutes.
- In a bowl, whisk egg yolks and temper with a bit of the sauce.
- Add the egg mixture back into the sauce and stir until thickened.
- Serve hot, garnished with parsley.
Notes
- Serve over buttered toast or in a puff pastry shell.
- Adjust seasoning to taste.
