Ingredients

  • 2 cups cooked lobster meat, chopped
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups heavy cream
  • 1/4 cup sherry or brandy
  • 3 egg yolks
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon paprika
  • Chopped parsley for garnish

Instructions

  1. Melt butter in a saucepan over medium heat.
  2. Add flour and stir until smooth.
  3. Gradually whisk in the heavy cream and bring to a simmer.
  4. Add sherry or brandy, salt, pepper, and paprika.
  5. Stir in lobster meat and cook for 5 minutes.
  6. In a bowl, whisk egg yolks and temper with a bit of the sauce.
  7. Add the egg mixture back into the sauce and stir until thickened.
  8. Serve hot, garnished with parsley.
